Put all ingredients from the coconut layer in a big bowl
Mix really well till completely combined
Press the mixture into a lined baking tray
Score the mixture to allow for easy cutting once fully set
Place in freezer until the mixture is completely set & hard
Remove from the freezer and cut into bite size pieces
Chocolate Coating
Add brown rice malt syrup & vanilla extract to a bowl with warm melted coconut oil & mix until dissolved and fully combined (add to heat if necessary)
Add Cacao powder and mix thoroughly until smooth & delicious
NOTE: As the chocolate starts to thicken give it an extra couple of stirs to make sure the syrup is fully combined and doesn't sit at the bottom. A little pinch of salt will really bring this chocolate to life!!!
Chocolate Coating the Bites!!!
Place a coconut bite onto a fork and lower into a bowl filled with the chocolate mix
Using 2 forks move the bite around until it is completely coated
Allow any excess chocolate to drain off before placing onto a baking tray lined with baking paper.
Once all bites are coated place the tray in the freezer set the chocolate
After bites are set place them into a sealed container and store in fridge or freezer until you are ready to enjoy!!!
